Easy and Nutritious Meal Ideas

Eating healthy and nutritious meals can seem daunting if you try to create fancy dishes that take hours to prepare…but it doesn’t have to be like that!  Here are some super simple examples of meals that I ate just last week that are easy, simple and super nutritious.  In some cases I used leftovers (salmon and beets) or frozen foods (green beans and turkey burgers) and in all cases I used both fresh, raw foods and simply prepared cooked foods.  Nothing you see here took more than 35 minutes to prepare and cook.  No real recipes, per se, just super simple preparation… nutritious, fresh and easy.  Let me know what you think!  What are your go-to simple dishes?

Healthy and Simple Meal

Chopped Salad of spinach, tomatoes, avocado, cauliflower, and drizzle of EVOO and balsamic vinegar, plus turkey meatball soup.

Simple High Omega-3 Meal

Steamed salmon with dill and lemon, roasted sweet potatoes, and garlicky green beans.

Super Simple and Healthy

Leftover salmon, braised kale, coconut barley and lentils, and tomato salad (tomatoes, beets, and cucumber).

Simple and healthy meal.

Spinach salad with beets and tomatoes, microwaved sweet potato topped with Greek yogurt and molasses, fresh fruit and turkey burger with BBQ sauce.
