Sometimes I just want a treat. These hit the spot when I want to have something sugary, decadent, but not tooooo over the top. Portion control. Though they are very much a high in sugar, refined carbs treat, they are only 146 calories per square (with 2g protein – but not much else “healthy”). Again…portion control.
Peanut Butter Rice Crispy Treats
- 6 cups crisp rice cereal
- 10 oz marshmallows
- 3 Tbs butter
- 2 Tbs peanut butter
- a dash of vanilla
- 1/2 tsp cinnamon
In a heavy bottomed pan, melt the butter and marshmallow on low heat, stirring frequently. Meanwhile, spray a 13×9″ pan with cooking spray and set aside. Once marshmallows are all completely melted, stir in the rest of the ingredients quickly and pour out into the prepared pan. With hands or parchment paper, flatten the mixture into the pan. Let cool completely before cutting into 15 squares.
