There are dozens of varieties of these little bites out there. It seems that everyone has a recipe. This is mine. Sweet with a little crunch, they are the perfect substitution for cookies or whatever is your vice. You’re welcome.
Chocolate Cherry Peanut Butter Chia Energy Bites
Ingredients:
- 1 cup whole rolled oats
- 1/2 cup peanut butter
- 1/3 cup unsweetened finely shredded coconut
- 1/2 cup dried cherries
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup peanut flour
- 2 Tbs raw local honey
- 2 Tbs chia seeds
- 1 teaspoon vanilla extract
Preparation:
Combine all ingredients together in a large bowl and mix well (I use my hands). Then, roll into balls of about 1-2 teaspoon size.
